Beef fillet, also known as tenderloin, is cut from a muscle that does very little work. This gives the meat its characteristically soft texture and makes it one of the most tender cuts of beef.
Fillet contains less fat and marbling than cuts such as ribeye, resulting in a milder taste and finer texture. Portions cut from the narrower end of the fillet are commonly known as filet mignon.
For the best eating experience, cook fillet quickly over high heat and serve rare to medium. Avoid overcooking, as its naturally low fat content means it can dry out more easily than a well-marbled steak.
Cooking Advice
- Pan-searing: Sear fillet steaks in a very hot pan to develop a caramelised crust. Depending on their thickness, finish them over gentler heat or briefly in the oven until they reach your preferred level of doneness.
- Grilling or braaiing: Cook over high heat, turning only when necessary. Avoid pressing down on the meat, as this releases its natural juices.
- Roasting: A whole beef fillet makes an impressive centrepiece. Season simply with salt, pepper and herbs, then roast until it reaches your preferred internal temperature.
- Sous-vide: Sous-vide cooking offers precise temperature control and consistent doneness. Sear the meat briefly after cooking to create a golden exterior.
- Seasoning: Fillet’s delicate character works well with simple seasoning, compound butter or a complementary sauce such as peppercorn, mushroom or red wine jus.
- Resting: Allow the meat to rest before slicing or serving so that its juices can redistribute.
- Serving Suggestion: Serve with roasted potatoes, seasonal vegetables or a fresh green salad. For a more indulgent meal, pair it with garlic butter, peppercorn sauce or a rich mushroom sauce.
