Lamb Loin Chops are a premium cut prized for their tenderness, fine texture and balanced lamb character.

Sometimes described as the porterhouse steak of lamb, each chop contains portions of loin and tenderloin separated by a distinctive T-shaped bone. They are particularly well suited to pan-searing, grilling and braaiing.

Standard portions contain two chops weighing approximately 125g each. As this is a naturally portioned product, individual weights may vary by approximately 25–50g.

Loin chops are generally more tender and delicate than leg or shoulder chops. Their natural marbling helps them remain succulent during quick, high-heat cooking.

This product is imported frozen and handled under carefully controlled cold-chain conditions.

You have the choice whether you would like this product supplied frozen or professionally defrosted under refrigeration. Defrosting requires advance notice and may affect the earliest available collection or delivery date.

Products supplied defrosted should be kept refrigerated and should not be refrozen while raw.

Cooking Tips

  • Pan-searing: Sear in a hot pan until well coloured on both sides, then reduce the heat if additional cooking is required.
  • Grilling or braaiing: Cook over medium-high heat, turning once a good crust has formed.
  • Seasoning: Loin chops pair well with rosemary, thyme, garlic, black pepper, lemon and olive oil.
  • Resting: Rest briefly before serving so that the juices can redistribute.
  • Serving suggestion: Serve with roasted vegetables, mashed potatoes, couscous, salad, mint chimichurri or tzatziki.

Avoid overcooking, as this relatively small and tender cut cooks quickly.

Storage

Keep frozen until required and defrost thoroughly in the refrigerator before cooking.

If supplied defrosted at your request, keep refrigerated, use within the period advised on the packaging and do not refreeze while raw.
