Chicken breast comes from the pectoral muscle of the chicken. It is naturally lean and cooks relatively quickly, although its low fat content means it can become dry if overcooked.
The breasts are supplied boneless and skinless for convenient preparation. Their neutral character makes them suitable for marinades, spice rubs, sauces and a wide variety of cuisines.
Cooking Advice
- Grilling or braaiing: Cook over medium-high heat, turning when necessary. Thicker breasts may benefit from being flattened slightly for more even cooking.
- Pan-frying: Sear in a lightly oiled pan over medium-high heat, then reduce the heat and continue cooking until done.
- Baking: Season or marinate and bake at approximately 190°C until fully cooked.
- Poaching: Gently poach in seasoned water or stock for tender chicken suitable for salads, sandwiches and shredded dishes.
- Stir-frying: Slice into even strips and cook quickly over high heat.
- Food safety: Chicken must be cooked thoroughly until the thickest part reaches an internal temperature of 74°C.
