More Info
Our South African A-Grade beef is imported chilled—never previously frozen—and cut into cubes in-house.
Topside is a lean cut with limited marbling. It works well for dishes where you want substantial pieces of beef without excessive fat.
As the cubes are prepared by hand, their exact shape and size may vary slightly. For even cooking, group similarly sized pieces together or adjust the cooking time as required.
Cooking Tips
They can be cooked quickly on skewers or slowly in a sauce, but the cooking method needs to suit the dish. For kebabs, avoid overcooking; for stews and curries, allow sufficient time for the meat to soften.
- Curries and stews: Brown the beef in small batches before adding liquid. Cook gently until the meat reaches the desired tenderness.
- Kebabs: Marinate if preferred, thread onto skewers and cook quickly over high heat. Avoid overcooking, as topside is naturally lean.
- Braising: Cook slowly with stock, wine, tomatoes or another sauce until the beef softens.
- Pot cooking: Use in goulash, potjie or other one-pot dishes with vegetables and aromatics.
- Seasoning: Beef cubes pair well with garlic, rosemary, thyme, paprika, cumin, chilli and robust curry spices.
Serve with rice, mashed potatoes, couscous, bread or seasonal vegetables.
